do you know that lacey cookie from the bakeries in boro park
it is a flat circle shaped cookie, that is brown and kind of lacey, with half of the cookie dipped in chocolate
does anyone have a recipe for it?

I am also interested, as they are my favorite cookie. I am sure I will learn that it is made with tons of margarine. Perhaps in my case, ignorance is bliss

Just in general I find that any bland vegetable oil will do for margarine or butter or shortening, one for one.

The Kosher Palette has a recipe. I cannot vouch for it.
1/2 C margarine
1/2 C light corn syrup
2/3 C firmly packed brown sugar
1 C all purpose flour
1 C walnuts, chopped
1 12 ounce package semi-sweet chocolate morsels
Preheat oven to 325.
Combine margarine, syrup, and sugar in a heavy saucepan over medium-low heat. Bring mixture to a boil; remove from heat.
Combine flour and nuts; stir into syrup mixture.
Drop dough by 1/2 teaspoonful 3 inches apart on greased baking sheets. (The cookies spread a lot.)
Bake 8 to 10 minutes. Cool 1 minute on pan, then transfer with a thin metal spatula to a wire rack to cool. The cookies will be soft and hard to handle, but will harden when cool.
Melt chocolate in top of a double boiler. Spread a thin layer of chocolate onto the smooth side of one cookie. Cover with the smooth side of another cookie to make sandwiches. Repeat with remaining cookies and chocolate. These cookies freeze well.
Yield: 2 dozen
