Im looking for a soft margarine-free Rugelach recipe. Id like to fill them w cocoa and/or cinnamon.
What has been tried by trial and error and found to be the best tasting and least likely to fail?
Thanks.

I make a really great dough that I use for Kokosh and cinnamon buns that has no margarine. I've used it for mini-buns, but never rugelach. It makes 5 lb if you are interested.

Dough (I put it in my Bosch in this order and mix for 10 minutes on high)
5 lbs flour (I split the bag - put 1/2 in first and then 1/2 the bag after the juice, only because it works better in my Bosch)
pinch salt
1 1/2 cup oil
2 whole eggs + 8 egg yolks
2 cup white grape juice or apple juice
2 cup sugar
3 cup warm water
5 Tbsp yeast
Chocolate Filling:
3 c. sugar
2 c. Cocoa
1 c. Confectionary Sugar
Cinnamon Filling:
4 c. sugar + 1 Tbsp Cinnamon
Cut dough into workable balls. roll very thin. spread with thin layer of oil. Sprinkle with filling and rub into oil so it gets wet. Roll up and either bake as logs, or cut into buns. (I love baking as small chocolate buns in tulip cups with a crumb topping, they come out so pretty)

Thanks a mil, sky. I hope to try it within a couple of days.
If anyone else tries it, please post any tips for those who arent regular Rugelach bakers.
