I would love to see recipes that are at the same time healthy, easy, and economical! And tasty. I find it is hard to find new, interesting recipes that meet all these descriptions. We got lentil soup covered, thanks, next?

Easy recipes that aren't relying too much on prepared foods. That might not be the target audience though.
Otherwise, I would love the magazine just to read anyway: “I read recipes the same way I read science fiction. I get to the end and say to myself "well, that's not going to happen” (Rita Rudner)

I love seeing recipes that are simple and don't require many steps.
just put the ingredients together, and bake/cook
it's also nice when it specifies whether the food freezes well or not

I would love to see desserts and other dishes that don't call for margarine.
I would also love recipes from around the world. My family loves to try new things, and sometimes just using similar ingredients with ethnic spices or techniques makes the food taste so different.

I'd love to see a substitutions article. We've become very gourmet in our cooking and baking and I would love to move past "a sick of butter = a stick of margarine." How about pareve substitutes for milk and creams (not just soy, but how to use coconut or other varieties and how they differ), condensed and evaporated milks, different cuts of non kosher meats and their kosher counterparts (if possible), etc.

I would like to see an article about hard to source kosher items that do exist but are very hard to find- like fish sauce (asian) and perhaps an article about not available kosher ingredients and their substitutions. In fact, I would happily write the second one for you.
In addition, I am in charge of a programme at our shul called 'united shabbat.' We have cooked - with volunteers and I am a volunteer too, meals from at least twenty countries. I would be happy to do a monthly article telling you what we are making so that people can try different recipes!

I would love to see "supper for 4 under $x."
The non Jewish magazines usually have nutritious but frugal meals, but I would love to see something with the average kosher prices. Of course it's different if you live in BP or Tallahassee, but the general idea. Beans and legumes are the same, as well as fresh veggies. So I guess I also want more legume based recipes.
And another vote for easy
