What can I do with a can of pickled mini eggplants?
I need ideas and recipes please. When I bought it I figured I would come up with something but still haven't.

To be honest, you just serve as they are, either as whole or cut in halves if they're large.
It's a standard item for Kiddush or for appetizer, just like olives.

Like MrsBissli says, serve like pickles.
Or add to salads, pasta salads, falafel, pita, sandwiches (after pesach of course).
