I tried that recipe once- I didn't like it that there were chunks of zucchini and only a small amount of
"dough" holding it together. Maybe I'll try the recipe but shredding the zucchini instead.

Dining in Again has an awesome one! Any guy that doesn't usually eat zucchini loves this! Let me know if you want the recipe...

zucchini kuge
6 med zucchini peeles and siced
1 large onion sliced
3 tbsp oil
4` oz can mushrooms drained
1/3 c mayo
1 tabsp onion soup mix
1/2 c bread crumbs or matzah meal
1 teasp salt
1/4 teasp pepper
4 eggs beaten
cook zucchini in water for 10 min. chop in food proceser on and off burst not to fine.
saute onion in oil untill tender. combine with the rest ing.including zucchini. pour in a well greased baking
pan. preheat oven to 350 bake for 45 to 50 min till lightly brown on top.

The one thats either baked as muffins or in a pie crust? Have you ever made it without the crust?

this is a carrot zuccini kugel made in muffin tins Its basically like a cake and comes out very moist. I also like to make it on RH bec it has 2 simanim in it. Also.. you can top it with craisins or a crumbly margarine sugar topping or something to make them pretty.
2 medium zuccinis and 2 carrots shredded
1.5 Cup sugar
1 Cup oil
3 Eggs
1 Tbsp vanilla
2 Cup flour
1 Tsp cinnamon
1.5 Tsp baking soda
3/4 Tsp baking powder
bake in muffin tins 350 degrees till toothpick comes out mainly dry.

I believe this is the recipe saweetie was referring to from Dining In Again. I make it myself and it's delicious.
2 lbs. zucchini
1 large onion
3 eggs
1 1/2 c. flour
1/2 tsp baking powder
1 heaping Tbsp chicken soup mix
1/2 c. oil
1/2 c. water
1/2 tsp white pepper
Grate zucchini, place in colander and squeeze out water. Dice onion, add to zucchini, mix, set aside. Combine remaining ingredients and mix together with squash. Pour into greased 9" round pan.
Bake at 350 for 1 hour 15 minutes. Raise oven temp to 380 and bake an additional 30 min.

I ended up getting the recipe and was told 2 large zucchini, so I used that and came out amazing! See the kishka zucchini kugel post, I used it for that on RH and it was a hit! Everyone complimented me on it.
Saving this in my recipe box!

My daughter's great recipe
Zucchini kugel or muffins (can put in pie crust also)
4 eggs
About 6 medium zucchini
1 small onion
1/2 cup oil
I Tablespoon Sugar or splenda
1 Tablespoon water
3 teaspoons baking powder
1 cup flour
1 teaspoon salt (or more if you like)
pepper to taste
Bake at 350 till firm and golden
