| I want to make a challah recipe that calls for 4 ounces fresh yeast. I only have dry. Anyone know how much I should use?

It's actually 2-1/4 tsp for each oz of fresh yeast.
4 oz fresh yeast = 3 Tbsp dry yeast (aka 9 tsp dry yeast) _________________ Really Awesome Mom!

2 oz. cake yeast = 6-3/4 tsp dry yeast (a little more than 2 Tbsp.)
http://redstaryeast.com/lessons/yeast_conversion_table/
so 4 oz. fresh yeast is equal to 13-1/2 tsp dry yeast, aka 4-1/2 Tbsp dry yeast, aka 4 Tbsp + 1-1/2 tsp dry yeast.

I always us 1 oz fresh= 1 Tbs + 1 tsp dry yeast
I used to use 4 oz fresh yeat in my challah. About 3years ago I switced to a generous 5 Tbs with great results! you can google ingredient conversions.

The conversion doesn't work with weights. Were talking about quality in rising.
