Grocery send me 7 big sweet potatoes-duno why. What is a good dish I can make with them?

Do you want to make (baked) spicy sweet potato fries? Jamie Geller has a really good/easy one in Quick & Kosher, there's another one in Dining In but I prefer the other one. Either way they're yum.

use 3 to make delishes baked sweet potato fries
use 1 in your chicken soup (then mash it with sauteed onions and salt, and make heavenly borekas)

(Spicy) Sweet Potato Fries
•3 large sweet potatoes, cut into 1/3-inch thick slices
•3/4 tsp cumin
•1 tsp garlic powder
•2 tsp kosher salt
•1/2 tsp black pepper
•1/4 cup canola oil
Divide cut potatoes in 2 9x13 pans.
In a small bowl or plastic cup, mix cumin, garlic powder, salt and peppers, and sprinkle over potatoes.
Drizzle oil over potatoes. Toss to distribute oil and seasonings evenly.
Bake at 425° Fahrenheit for 1 hour or until crunchy on the outside and tender on the inside.
(Original recipe calls for double the amount of black pepper, plus cayenne pepper.)

I dice them into small, bite-sized pieces, toss with oil, salt and black pepper and bake until some of the pieces get brown and crunchy.
I then serve with a sweet chili sauce on top.
It's SOOO yummy.

I love them roasted with olive oil and sea salt.
I also like them baked (with skins on) with cheddar cheese, margarine and sour cream.

I love sweet potatoes - they are delicious cut into chunks with olive oil, salt and pepper and roasted - eat as is, or make into salad with spinach leaves and pecans.
They make great kugel, or as a side dish mashed with a little butter/margarine with fried onions on top.
Or try slicing them and cook as a gratin, make a sauce with 5 tbsp olive oil, 1 tbsp vinegar, 3 tbsp each brown sugar and onion soup mix. Bake until soft.

sweet potatoes are delicious on their own.
wash, poke hole or slice into, bake in oven until softened. will be sweet, syrupy. good hot or cold (can be sliced cold)
wash, dice, mix with cut up red onion, and oil (olive) - bake - toss a few times, till gets dark & crispy.
dice together with regular potatoes. cut in onions (red or spanish), rosemary - toss with olive oil, bake....
very versatile veggie

2 sweet potatoes
2 eggs
1/2 c brown sugar
1/2 c sugar
1/3 c oil
1/4 c flour
sprinkle cinnamon
Boil sweet potatoes untill soft. Peel then mash until there are no lumps. Mix everything together and pour into 9x13 pan. (It is supposed to be a very thin layer.) Spinkle cinnamon. Bake on 350 for 1 hour.
Freezes perfectly.
