We had the most delicious rolled up loaf of succulent turkey meat last shabbos, and I forgot to ask our hostess what it was. It was a large roll of boneless turkey meat.
What is this called, and how do I bake it?

The Perfect White & Brown Meat Roll
can be used for Pesach too
WHITE MIXTURE
1 lb ground chicken breast, no skin
2 eggs
2 cooked and mashed potatoes
1 small onion sauteed in oil
1/2 tsp salt, optional
BROWN MIXTURE
1/2 lb chopped beef or dark turkey
1 egg
1 cooked and mashed potato
1 small onion sauteed in oil
1/4 tsp salt, optional
Combine all white ingredients and spread onto greases foil or parchment paper in a round shape, about 1/2 inch thick. Brush top with oil.
Combine all ingredients for dark mixture and spread onto another circular shaped paper, about 1/4 inch thick. Brush with oil. Invert directly over white mixture and roll up, leaving paper behind.
Rewrap well and twist edges. Cook or bake in meat loaf pan of salted water for about one to one and a half hours, at 350 deg.
Makes about a dozen, 3/4 inch slices.
P.S. You can probably just do the dark (brown) meat if you want, that's what we do. Freezes well, too.

What I'm thinking of is not made with ground meat, but boneless breasts rolled up into a large, thick log, then baked and served sliced like deli meat.

Batya, I think I know what you're talking about. It's turkey meat (not ground), formed into a loaf and baked with string around it.

Batya, was it white meat? It sounds like a boneless turkey breast.

This is it. Not a single breast, but formed and tied with string. So what do I call it when I ask at the butcher, and how do I cook it??

I know that this is not exactly what u r looking 4, but I just made it and it was deliciouds so I decided 2 share.
Saute onions, fresh garlic and zucchini then add ground turkey and brown it.
Spread out pastry dough and spread mixture of honey mustard. put meat mixture on top and roll like a deli roll. pinch the ends and pour duck sauce on top. bake and Yummm it is really pretty and good. Enjoy.(freezes really well)

I know what you're talking abt, I also once had it at a guest house, its like a big loaf of turkey and you slice into thin slices (tho thicker than deli) I bought one but never made, anyway I remember it being really yummy so I called the host after shabbas and heres what she told me she did to it:
spice it with salt, garlic, red paprika, than soak it in wine overnight, add ketchup and onions, bake it covered for 2-3 on 350. cut when cold--hope this is what you're looking for
yum I just got in the mood for it
