Someone brought this to my choirs Chanukah party... it was soooo good!
I asked her for the recipe and I made it yesterday... YUM!
Quinoa recipe
2 cup of quinoa to 3 1/2 water
Rinse and drain the quinoa. Boil water, add the grain, bring to boil, reduce to min, keep on for 15 min. Take off the heat, let it sit for another 10-15 min with lid closed. Put in a large dish to cool, then put in the fridge to cool. Combine all the ingredients when cooled.
Other ingredients:
1 1 cup of frozen peas: thaw in cold water, drain
2 Cashews: ¼- ½ cup, roast lightly
3 Red onion thinly sliced (to taste)
5 Optional: chopped dried cranberries and/or fresh chopped cilantro
Dressing: mix all the ingredients
1 ¼ cup of sunflower (or other) oil
2 3 Tbl of wine vinegar ( don’t recommend balsamic )
3 3 Tbl of soya sauce
4 1 ½- 2 tea spoons of curry powder
5 ½ tea sp of salt
6 ½ tea sp of sugar
6 Combine the cooled quinoa with other ingredients, mix. Add the dressing, mix, leave in the fridge to cool.
7 Enjoy!!!!! It always tastes better the next day

How would this be without the cashews? I would like to make it for Shabbos, but my guest can't eat nuts.

It would still be good without the cashews. Can your guest have sunflower seeds, or pine nuts? Those would be good substitutes.

I made this and it really was delicious. I used toasted sliced almonds since I did not have cashews. It was definitely better the next day and kept for a few days. Even my baby loved it. Thanks for the recipe.

You might want to edit the original post. the numbers are confusing-you can't easily tell which ones are the enumerated ingredients and which numbers are the quantities.

I make this and add mandarin oranges and fresh parsley as well. yum!

You inspired me to pull out the package of quinoa I bought a while ago and forgot about.
I just sauteed onions and frozen peas and added to the prepared quinoa. It was very good and filling. Even my kids ate it (my son called it rice!)

In the recipe it says 2 cups of quinoa does that mean 2 cups raw?

Love quinoa! I use a recipe very similar to this one, but prefer sesame oil - super yummy!
