Black and White Rice Balls
2 cups water
1 Tbsp margarine
1 tsp salt
1 rounded cup white rice
2 tablespoons black sesame seeds, toasted white sesame seeds may be substituted
Bring water to a boil in a small covered pot. Add butter, salt and rice to the pot. Return the water to a boil. Reduce heat to simmer and replace cover. Simmer 18 minutes and remove rice from heat. Take the lid off the pot to cool rice a bit. Scoop rice into balls with an ice cream scoop and your hands. Dampen hands with water to work with rice if it is very sticky. Set rice balls on a plate and sprinkle with black sesame seeds.

Mon: honey chicken, oven rice vegetable saute, radish salad
Tues: yellow split pea barley vegetable soup with flanken and crusty rolls
Wed: Chanukah party
Thurs: leftovers from party

Tuesday: pepper steak with carrots julienne, snow peas, baby corn and red onion, over rice
Wednesday: mustard poppy chicken, oven farfel, lemony dill carrot salad
Thursday: sushi, avocado salad

I just add 4 cloves of crushed garlic, some olive oil, salt to taste, and parsley flakes. (I was out of parsley last night so I used scallions.)

What's better parsley flakes, or the parsley cubes in the freezer?

Mon- Asian bbq salmon/ salad and rice
Tues- grilled chicken wraps and french fries
Wed- garlic bread, stuffed pasta shells and tossed salad
Thurs- hotdogs and hamburgers on the foreman while I cook for Shabbos!

Schwarma Chicken Skewers
1.25 lbs. dark chicken cutlets (de-boned, de-skinned chicken bottoms) do not use chicken breast
4 Tbsp olive oil OR 1 Tbsp lemon juice
4 cloves garlic, crushed
1 tsp curry powder
1/2 tsp cumin
1/2 tsp coriander
1 Tbsp sugar or sugar equivalent
Cut the chicken into big long strips. Place all ingredients in a large Ziploc bag. Shake until very well combined. Marinate in refrigerator for at least 2 hours.
Thread each strip of chicken through a skewer. Sprinkle with salt
Bake at 425 for 25 minutes.
Roasted Sweet Potatoes
Cut up sweet potatoes. Drizzle with olive oil, and salt to taste.
Dijon Salad
1 (12 oz.) iceberg lettuce mix
1/2 container grape tomatoes, halved
1/3 red onion, slivered
1 Tbsp lemon juice
1 Tbsp olive oil
1 tsp Dijon mustard
salt to taste
Mix all ingredients by hand (with gloves.) Serve immediately , as lettuce will wilt.
(If you don't have disposable gloves and will be using a salad fork to mix, use 3 Tbsp olive oil, not 1.)
