I sautee some onions, add sliced Zuchinni and cubed eggplant.
Sprinkle garlic salt, oregano, other spices, and then tomato sauce.
Sometimes I make something similar to ratatouille in the oven. I just cut up zuchini and eggplant, place them in the pan, add spices, tomato sauce and cheese, and let it bake at 350 for awhile. (Sometimes when I'm rushed I make the same thing in the microwave).

saute: onions, zucchini, eggplant, green pepper, mushrooms, and tomato
add: 3/4 cup ketchup 3/4 cup tomato sauce
salt pepper garlic and cayenne pepper if you want it hot like salsa
cut the pieces big or small whichever you like better, I like big pieces better.
