kishka stuffed chicken
chicken lo mein

my favorite!
4 chicken breasts
1/4 cup dijon mustard
3 tbsp Honey
2 tsp lemon juice
2/3 cup bread crumbs
oil
Preheat oven to 37s
Mix first 3 ingredients
Put bread crumbs in a seperate plate
Dip each peice of chicken breast in honey mustard mixture, then in cread crumbs and lay flat in a 9 by 13 pan.
drizzle oil over the chicken when done and bake for 20-25 min

I make basics. I usually just fry my shnitzel but now dont want to fry it.
Can I have a chicken lo mein recipe?

happynm and pinktichel, those both sound yummy and easy! I look forward to trying both recipes.
happynm, when you say 4 chicken breasts do you mean really mean 4 full breasts/4 lbs.? Or do you mean 4 cutlets/portions?

I made yesterday as follows
Mix mayo and ketchup. Dip cutlets then dip in crushed potatoe chips... It was delicious. Potato chips made it salty and tasty. Baked it 30 minutes.
Made lettuce salad and potato salad as side dishes.

Chicken Roll Ups
1½ lbs. chicken breast, cut into 8 long pieces - flattened
8 slices pastrami
½ cup mayonnaise
1 cup bread crumbs
duck sauce
Preheat oven at 350.
Place a slice of pastrami on top of each long strip of chicken. Roll up. Secure with toothpick.
Repeat with remaining chicken and pastrami pieces.
Dip each roll up into mayonnaise. Roll into breadcrumbs.
Arrange in greased 9 x 13 pan.
Bake, uncovered, for 30 minutes.
Drizzle a drop of ducksauce on top of each roll up before serving.
Serve extra duck sauce on the side as a dipping sauce.

I've substituted Italian salad dressing for eggs. That gives them good flavor. But my favorite is when I use regular eggs and bread them with Ta'anug flavored corn flake crumbs.
I bake my cutlets in the oven. They come out nice and moist.

Whenever you use bread/cornflakes crumbs buy the plain/unflavored and spice it yourself. I find it tastes much better this way.

Pinktichel, I've made your chicken cutlet recipes many times & it is always delicious. Not sure if I ever thanked you for it, so thank you! (The only thing I do differently is cut down on the oil.)
