I have beets and some veggies(carrots, onion, tomato,squash,....), but no cabbage, any ideas??

Here's one!
Carrot-Beet-Ginger Soup
3 medium beets
1 cup onions chopped
1 Tbls oil
1 lb carrots, peeled
1 garlic clove
1 Tbls minced fresh ginger
6 cups water or stock
1 Tbls grated orange peel (optional, but yummy)
3/4 tsp salt
pepper to taste
Roast beets in aluminum foil until soft (peel and chop under water when done and cool). At the same time, roast the carrots (tossed with a bit of oil) in the same oven. Fry onions in the 1 T oil until translucent. Add ginger, garlic and orange peel. Add the water/stock and roasted vegetables. Boil all until are soft. Puree in blender, food processor, food mill or stick blender. Add salt and pepper to taste.
