does anyone have a recipe for meat loaf that I could make for shabbos lunch

I don't have recipes but I had 2 really good meat loafs (and I usually don't like it)-
One was made "jelly roll style" with mashed potatoes in the middle and the other had pastrami in the middle.

this recipe is from the purple lubavitch women's cookbook. It's super duper delicious. Called 'dutch meat loaf':
1 ½ pounds ground beef
1 C soft bread crumbs
1 onion, diced
1 15-ounce can tomato sauce
1 egg
1 ½ tsps salt
¼ cup water
2 tbsps sugar
2 tbsps mustard
Pre-heat oven to 350°.
In a large bowl, combine ground beef, bread crumbs, onion, ¾ cup tomato sauce, egg, and salt. Mix well and shape into loaf. Place loaf in pan. Combine remaining tomato sauce with water, sugar, and mustard. Pour over loaf.
Bake 1 ½ hours. Remove from oven and let stand a few minutes before slicing.

I make a spicy meatloaf.
Ground beef or turkey
Egg
Bread crumbs
Brown sugar
Ketchup
Heinz 57
Mustard
Black Pepper
Onion
Garlic
Can't give you measurements because I just eyeball it.
If we are having meatloaf, DH wants mashed potatoes and a hot green vegetable, no matter what else we have.

I have tried meatloaf countless times, but I have not yet found a foolproof recipe. If you have a recipe with exact measures (no tomato sauce or ketchup)please post.

I make something very simelar to Goldrose' recipe. for a variety you could put sauteed onions, green peppers, zuchimi in the mix as well. put allready cooked and mashed potatoes on top of the meat to make a shepards pie.

when you say tomoto sauce do you mean chopped tomotoes or tomoto puree???

I make my meatloaf the same as you would hamburgers. it looks nice if you roll it jelly roll and put in the meat loaf in between the rolls colorfull veg.
I serve it with salad, and mashed potatoes

I do serve meatloaf by Shabbos day sometimes because you can serve it cold (its realy great in a challah sandwitch for the kids if you slice it thin)
My recipe (or rather what I throw in)
1pkg ground beef
1 med diced onion
1 or 2 eggs
breadcrumbs
LOTS of Garlic
salt
pepper
Sometimes I put tomatoe sauce on top when its almost ready

There are some things I just won't make - meatloaf being one of them. I think I tried it once and it didn't work so I gave up. I'll be more than glad to have a piece it you make it. (no margarine or eyeballs please)

I also make meatloaf the same as my hamburgers. just mix the meat with and egg, flavored breadcrumbs and some spices- form into a loaf and drizzle with ketchup before baking. I find it one of the easiest suppers, and Dh loves it. What could be bad?

This sounds very good!
Do you just place it on a flat pan?
