Vegetable fried rice
• 2 cups basmati rice, cooked according to pkg directions
• 5 Tbsp oil, divided 6 eggs
¼ tsp salt
1 medium onion, diced
1 fancy zucchini, unpeeled and diced
1 yellow squash, unpeeled and diced
1 red pepper, diced
• 8 oz (225 g) white button mushrooms, quartered
16 oz (450 g) frozen peas and carrots, not defrosted
ASIAN SAUCE
4 Tbsp extra-light olive oil
5 cubes frozen ginger

Broccoli or other bp veg soufflé in oven to table dish.
Place veggies in dish.
Mix eggs, mayo, onion soup mix and pour over dish and bake.
Freeze and reward in oven.
