This was a fun mashup of two great comfort foods - Mac n Cheese and Eggplant Parmigiana

You could of course just use the recipe as a template since everyone has their own recipe for each o the separate items.

I made the Eggplant my way using their quantity and I did "cheat" with good bottled pasta sauce.

However I did use their recipe for Mac N Cheese since it looked good
