Has anyone ever tried to make this? I saw a YT video recently of Claire Saffitz (formerly of Bon Apetit) making turkey stock and she first roasted the turkey and veggies and then covered them in water and simmered.
Really tempted to experiment with chicken soup, not this week, of course, but just curious if anyone has made it before.

Seems unnecessary.
It is very common to make delicious turkey soup from the carcass because you have a lot of bones and generally lots of meat sticking to the bones so that it enables you to make a delicious hearty soup.
You can do this with chickens but generally chickens are smaller and so you don’t have enough to make a nice big pot.

Supposedly it intensifies the flavor.

Perhaps I misunderstood as it is very common to use the carcasses of roasted poultry to make delicious soups. Turkey is mor3 often used because there is a lot to use but people also make chicken soup.
However I don’t know anyone who deliberately roasts a chicken to make soup. They just plan do they are roasting chicken and turkey and use leftovers to make soup or stock. You can freeze chicken carcasses until you have enough for a bit pot.
