I got inspired by the thread about cooking for 8 for Yom Tov with a very tight budget and using stuff that we already have on hand and I decided to try and use some items I have to make soups.
I have red lentils. I was thinking of making an orange soup using red lentils, carrots and sweet potatoes which I have . But I don’t know how to properly cook or prepare the lentils for the soup. Can someone please give me instructions with how to prepare or cook lentils that have the right texture in a soup? TIA

Make the soup a little more watery and add 1/2 cup. Let it simmer for at least a half hour.

Place a 6 qt pot on stove, spray pam on bottom or pour in a few tsp oil. Turn stove on medium.

Chop a few onions add to pot
Chop 1 lb carrots or more add to pot
Chop 1-2 zucchini add to pot
Chop 1-2 yams (if 2 not so large ) add to pot

Take a 16 oz bag of red lentils. I use anywhere from 1/2 bag to whole bag.
I visually casually inspect them for bugs (have never found, and douby that I need to) as I pour about a half cup at a time into a clear plastic container. I fill the container with water and pour out, refill and pour out, etc a few times (4?) Until the water looks more clear and less starchy.

Add all the lentils to the soup.
Fill the pot to an inch from the top.
Add some salt and pepper and garlic powder.

Cook on high a little until it foams, then turn down to low.
Let simmer for 45 minutes to an hour.

Can serve like that or blend with an immersion blender.

Add salt or garlic salt to individual bowl of soup to taste.

Enjoy!
It's a hit in my house
