Which food (be it cooked, baked or bought) have you got ready & available the WHOLE time for the family to eat/nush over Pesach ?

Matzah with nice homemade dips (guacamole, egg salad, tuna salad), cream cheese, and jam. Macaroons. Nuts. Fruit.

All bakes goods are homemade:
Crackers/egg kichel eated with eggs or liver or avocado
Chocolate chip cookies
Biscotti
Cakes
Fruits
Chips
Leben
Yogurt
Cottage cheese

PESACH CRACKERS

Ingredients
3 eggs
1 3/4 C. potato starch
2 Tbsp. sugar
1/2 tsp salt
1/2 c. oil

Directions
mix ingredients together.
spread on 2 lined cookie sheets. bake at 350 for 10 minutes. cut into squares and bake another 30 minutes.

I find it's easier to spread the batter out if I put it on the cookie sheet then place a second piece of parchment paper on top and use a rolling pin (I usually just use my oil spray can since I don't have a pesach rolling pin) to spread it.

Crackers – another recipr
Preheat oven to 400-450
2 ½ Cups potato starch
1 ¼ cup ground almonds
Scant ½ cup olive oil
Scant 1 Cup water (add last, slowly, as needed)
1 tsp salt
Mix all except water. Add water till it forms a dough, lifts nicely off walls of mixer or by hand. Careful not too wet
Roll paper thin between 2 parchments
Keep excess dough covered in plastic bag so it wont dry out.
Score dough with sharp knife
Bake 5 minutes, rescore
Bake 5-10 minutes more till lightly browned at edges.
4 batches
Only make 2nd batch when 1st dough is used up. Dough is more easily handled when fresh and soft
(we use heavy rolling pin and a pizza wheel)

Tuna (ready)
Cold cuts
Quinoa

We melt baking chocolate over slivered almonds and crack it into candy. Everyone loves it here.
