My kids want to have a garden when we go to the Catskills for the summer. Is there anything that we can plant that we'll see results in such a short amount of time (8 weeks)?

If you buy plants instead of seeds, sure! Tomatoes and zucchini come to mind. But from seed you could grow salad greens, radishes, or baby carrots.
