Bean and barley soup
a la Defy Gravity
2 onions
1 can of beans, drained; kidney, white, or black; puree half if you can
1/2 cup barley
14 oz canned tomatoes with liquid or subs. equal amounts of fresh
1/2 lb soup or mixed veggies
4 cups water
seasonings to taste: garlic, salt, pepper, Italian seasoning, dill, parsley
Dice your onions and sautee until clear; add the water and your barley and let boil. Simmer for about 20 minutes.
Add the beans, your tomatoes, and the vegetables. Let simmer another 15 minutes.
It makes a thick soup; eat and enjoy !
