So DH is on phase 1 of the South Beach diet and all my typical Shabbos foods don't fit the restrictions...and I really want to make some good stuff to reward his efforts...poor guy is starving all the time
basically, he can't eat any grains, sugars, fruits, root veggies, and most legumes for the first two weeks.
So anyone have any good ideas for salads, side dishes etc that would work? I already know I;ll be cooking lots of protein...so I have main dishes covered... let's get creative....thanks!!

Try a veggy kugel.
Saute' a large onion.
Add 2 lbs. of frozen veg. (broccoli, cauliflower, spinach) and stir fry until mostly defrosted.
Add 1 dozen eggs
3/4 c. mayo
onion soup mix
a little salt
Bake in 9x13 for about an hour.
These ingredients should be compatible. They are ok for Atkins.

One little bag is enough. I think that's about 1/4 cup.

How about fried eggplant? Do the normal treatment, rinse off most but not all the salt, shake on a bit of spices and sautee...you can probably sautee in spray as well, but get them well cooked. Dh and I love eggplant this way.
Marrow/squash roasted in the oven. Scoop out middles, mix with spices, sauteed onions, mushrooms, put back in and cook.
