I'm trying to balance a work schedule that's about to get longer and cooking. I'm looking for ideas on go to salad recipes or dressing to make either quickly or the night before. Any ideas for quick and EASY (emphasis on the easy) recipes?
Also, what other dishes are your go to dishes for busy nights?

Prepare different dressings in containers at the beginning of the week. Then take out a bag of ready lettuce, some grape tomatoes, sliced red onion and cubed kirby and your good to go.
Also, prepare various cut up veggies in stick. Store each veggie in a separate container (if they're mixed they will go bad.) Serve with one of the thick dressings/dips.

Here're the three easiest dressings I most often use: (no measurements, sorry)
1. "Israeli salad dressing" (I use this for almost every salad) - olive oil, lemon juice, salt & pepper. Sometimes add in balsamic vinegar.
2. "creamy garlic dressing" - mayo, vinegar, garlic powder (or fresh crushed garlic if you like a stronger garlic taste), salt, pepper.
3. "thousand island dressing" - mayo, ketchup, vinegar, garlic powder, pepper.

Our dinners almost aways consist of: 1 carb dish, 1 veggie dish (even if it's "just" salad), and 1 protein.
My super simple dishes:
pasta w/ jarred marinara sauce, baked zitti, omelets, hot dogs, soup w/ easy garlic zaatar bread, oven baked shnitzel (fish or chicken), rice, orzo, steamed string beans.
