I would like to cut up vegetable tomorrow for a vegetable platter for Sunday morning. Is there any way for me to do that and keep them fresh for about two Days? Or am I going to have to wake up extra early Sunday to cut them up Then? I would prefer not to do that or even cut them motzei shabbos as I will be busy setting up then.
Vegetable will include peppers, carrots, cucumber, and celery. I am not sure what else.

If you keep each cut vegetable separate they stay pretty fresh.
Also, why don't you use easy vegetables in your mix like baby carrots, grape tomatoes, and baby corn, which don't have to be cut?

Like above poster stated, keep each kind of veg separate. You could however line the container with a (paper) towel to absorb any moisture.

cover with a damp paper towel. putting a dry one underneath will suck out the moisture.
