Beets with ginger dressing
2 lbs beets, fresh
olive oil
balsamic vinegar
ginger
salt and pepper
pistachios
You bake or boil the beets. When cool, hack off the top and bottoms and peel.
Slice into wedges and top with 2 T oil, 1 T vinegar, 1 T ginger (use your vegetable peeler), salt and pepepr to taste, and half a cup of already toasted and chopped pistachios.
Mix and serve cold.
