chumus, techina,
dill dip- dill, mayo, garlic, salt, lemon/vinegar, water to thin- puree w/ immersion blender
sour cream and onion soup mix
I'm not a fan but lots of pple like ketchup and mayo- w/ or w/o spices

Every party I've ever been to has had a bowl of spinach dip. It's amazing how that stuff flies out of the bowl!!

standard onion and mustard dip... 1/2 cup mayo, 1/2 cup parve (soy) sour cream, 3-4 tbsp grain-ey mustard, 1 tbsp onion soup mix. Chill for a few hours.

1/3 ketchup
2/3 mayo
onion powder, garlic powder, salt & pepper to taste
you can also make a dairy ranch dip

I know it's been a while, but adding a new one for those interested:
I put mayo, vinegar (I used red wine vinegar but you can use whatever you have), paprika, onion salt, and some minced garlic, and I used it as a dressing for cucumbers - really yummy.
You could also add a little ketchup if you don't mind a little sugar (but about 1/5 the amount of ketchup to everything else... really only a tiny amount.
And it's possible to get sugar-free mayo. (edit: apologies, just realised the sugar free part wasn't relevant for this post, but for a different one I had open at the same time)
Oh, and the consistency depends on whether you're using it as a dressing or a dip. So to make it more of a dip, use more mayo and less vinegar.
In short:
Mayo
Vinegar
Paprika (lots)
Onion salt
Minced Garlic
Ketchup (optional)
