I made amazing sweet potato kugel from a Bon Apetit magazine (Chanukah issue).... The recipe was actually for latkes, but I made a stove-top kugel out of it.
let me know if you are interested in the recipe.

Hannah, is the tomato in the zuchinni recipe regular tomato, or crushed tomato, or tomato sauce?

Zun, on her site, said she does zucchini sauted as a noodle topper, but theyhave alot of allergies in her house and her standards may be a bit different than othrs....I can get you her recipe if you want it, though.
OP, did you want non carb things, or just none white flour carb recipes......
There is couscous and rice and barley...with different mix ins of course. (And you can get whole wheat couscous and brown rice, of course.)
There's pumpkin pie...

I am pre-diabetic so I avoid sugar, no-good carbs like potatoes and sugar. I'm not on one of those crazy no carb diets.
Pumpkin pie sounds good- can u give me a recipe?

I make a crumb recipe from tnhe Purple Lub cokbook - tell me if you need a pie crust recipe (has sugars and white flours tho)
and follow the canned recipe. I use vanilla enr rice dream instead of mik, and I dont use the fulll 12 oz, I use about a cup.

OK, here goes. Tell me how it works out
Spicy Sweet Potato Latkes from Bon Apetit, December 2005
2 lbs sweet potatoes
1 1/2 cups diced onion
3 eggs
6 tblsp. all purpose flour (I have used whole wheat four with good results)
salt
black pepper
1 1/4 tsp. cumin
1/4 tsp. cayenne pepper
Grate potatoes into a towel, squeeze out excess liquid. Place in bowl.
add eggs, onion, flour, salt, pepper, cumin and cayenne pepper, if using.
Fry latkes in oil til browned on both sides, about 5 min. per side.

I made this recipe a few times, as a kugel in a frying pan. You pour the mixture into a pan with a few tbsp. hot canola oil, let cook for 10 min, then flip onto a plate carefully and cook the other side.
Tip: the cayenne pepper adds a great little zing to the recipe, but if you have picky kids, you might want to skip it.

Those latkes sounds good but why would someone want to substitute something more fattening like latkes for potato kugel?

they may be drenched in oil but they're lower in carbs than white potatoes....
also, by cooking it as one piece in a pan, you dont have to use as much oil as for making individual latkes.

someone made a 3 layered kugel for my son's bar mitzva - think it has a layer of broccoli, a layer of carrots - maybe it had a layer of potatoe as well , so that may defeat the purpose

that recipe is in the Kosher Palette. It's delicious but realllly fattening!

It's very nice looking but I wouldn't say delicious.......it's got a boatload of mayo in it.
It's cauliflower, broccoli, and carrots. No potato.

here's my zucchini kugel recipe, revised from the purple cookbook:
4 huge zucchinis- cooked, mashed, and drained
3 eggs
1/2-3/4 cup oil
3/4 cup flour
season with a bit of salt, pepper, garlic, sugar
use 9x13 pan
