“SHRIMP” STUFFED TOMATOES
From Prevention magazine
Tomatoes
onion
Garlic
Fat
raw Rice or leftovers
White wine or apple juice
Water or broth
Defrosted fake shrimp or similar
Parsley
Salt and pepper
Slice off the top of your tomatoes and scoop out the insides. Sautee an onion in the fat and add a cup of wine and let simmer about 5 minutes. Add rice, 3 cups of water or both and cook until done, about 20 minutes. Stir in the fish, 2 T parsley, and 2 tsp fat. Add salt and pepper to taste. Serve in tomato.
