I let it defrost for awhile, and srain away the excess liquid.
I then lay in a single layer in a baking pan, spray with a bit of pam, and pour in a bit of lemon juice into pan.
I then sprinkle za'atar onto fish, and bake uncovered for about 20 minutes. sometimes I also add garlic and paprika.

Sautee a few sliced cloves of garlic and 1 sliced onion. Lay bottom of a baking pan with garlic/onion, place tilapia fillets above, top of tomato sauce. Bake till cooked through.

This is delicious and so easy.
Pan Seared Tilapia
•4 tilapia fillets (if frozen- defrost first)
•3 garlic cloves, crushed
•1 Tbsp paprika
•1 Tbsp dried parsley flakes
•1 1/2 tsp Kosher salt (less if using regular salt_
•1/4 tsp black pepper
•3 Tbsp olive oil
In a small bowl or plastic cup, combine the garlic, paprika, parsley, salt, pepper, and olive oil.
Brush tops of tilapia very generously with half of the paste.
Lightly grease a non-stick skillet over medium heat. Place the tilapia, seasoned side down, into the hot skillet. Sear for about 7 minutes.
Brush the other side of the tilapia with the rest of the paste. Flip, and sear for 4 additional minutes.

in the rosh hashana edition of relish, there is a recipe for tillapia with coconut. I can attest that its absolutely delicious, since I ate it at a simcha catered by the caterer who was credited. I dont have it, but maybe someone can post it.
