I am looking for an easy and refreshing appetizer for Shabbos Lunch. Maybe something fruity or a salad - but only a salad that I can use the prewashed iceberg lettuce. I can't deal with checking...

this is really easy and yummy-
one can of fruit assortment drained, a packet of jello, water, mix all together, put in the fridge and serve next day in small bowls, I use clear glass bcz it looks pretty
OR
(this u could even make shabbas morning)
ambrosia:
2 richs whips, 1 bag of frozen strawberries, defrosted, small can of mandarin oranges, drained, small can of pineapple, drained- mix all together and serve,

I make this salad a LOT and it looks so appetizing and pretty to begin the meal with:
place lettuce at bottom of plate.
On top of lettuce place angel hair pasta
on top of angel hair place strips of cold cuts (I use corn beef & turkey= bec. I like to use two different colors for contrast)
on top of cold cuts- sprinkle some (bread) croutons.
I place in a little (plastic) shnaps cup dressing on each individual plate. This way everyone uses as much or as little dressing as they wish.
Salad dressing recipe I can get if you need, but it's basically a garlic/mayonnaise type dressing with various seasonings.
It's easy to make and looks great!

My family loves this salad!
Iceberg Lettuce Mix
grape tomatoes sliced in half
cucumbers
strips of cold chicken cutlets (either grilled or fried)
salad croutons
Mix equal amounts of sugar and vinegar with
Mayonaise, Garlic powder and a little Barbeque sauce.
Enjoy

Do you mean instead of the fish or instead of cholent?
Did you want to go: ptcha, egg salad, babganoush, or half a grapefruit with a cherry?
Chopped liver?
Tell me more what you need.

How about the Euro salad? you can use the iceberg lettuce mix, add mango, kiwi, strawberries, honey glazed almonds & craisins & then there's a delicious dressing. Everyone that tasted my salad loves it! Let me know if u need the exact receipe.

Queen, you could probably used grilled salmon instead of coldcuts, right? PLease post the recipe for the dressing, I might try it!!

mom 22 I make my own babaganoush--really easy--
1--place 2 large eggplants in a 9 by 13 pan
2--poke holes with fork
3-put it in your oven on broil for 1 hour
4--turn over, poke holes and broil 45 mnts
5--let cool bit
6-- scoop out the insides with a spoon into a strainer
7--VERY IMPORTANT let the eggplant drain overnight--the juice is bitter
8-- mix with mayo salt and fresh garlic
its a hit

Yup I sure do make my own!
I have tried every preparation method under the sun (baking, frying, etc.) but this one is the best:
You prickle the eggplant with a fork a few times.
Nuke for 8-12 mintues, dep. on size.
Crunch up by fork or with food processor with some mayo, salt, and garlic to taste.
Eat and enjoy!

a really elegant appetizer for shabbos lunch or friday night. I basically mash a can of salmon and some mayo and spices and scoop in on a plate of lettucce wiht veggies and put some melba toast on the side.
it looks nice and is easy!!!

I made gazpacho (cold tomato soup with lots of veggies) last Shabbos. We served it for both meals. It tastes best when left to sit overnight, so I make it on Thursday afternoon. Very refreshing for the summer!
