We know that it refines us, as Jews.
But what, if anything, does it do for non Jews, if they happen to eat this way. Or if they occasion to eat this way.

There are non-jews who prefer to buy items with a hecksher. It doesn't do anything for them spiritually, they just like the extra security of knowing the food is reliably supervised (whatever that may mean, since all food is supervised by the USDA now).
Many non-jews like the way kosher meat tastes better because it is pre-salted. Also, if a person is a vegan or allergic to dairy, a pareve hecksher is a better indicator of that than just looking at the ingredient list.

Yes, you are what you eat.
If a [gentile] avoids eating predatory animals and what the Torah calls disgusting creatures and only eats domesticated animals, he will be more spiritually refined. And even (says my husband) if they eat animals that were shechted properly, this will have a positive spiritual effect on them (though not to the same extent as for a Jew).

I have a Hatian employee that only buys chicken and meat in a kosher butcher. When I questioned her why she would spend all that money, she said the fact that we have a mashgiach watching over the cleaning process, makes her feel more comfortable eating the meat and knowing it's pure and clean.

I've read that some non jews see our food as a healthier alternative to mainstream food. Also, for a lot of people that cannot eat specifically meat or dairy, they know that with a reliable hechsher, there will not be any hidden ingredients that would compromise either their health or their vegetarian values, whatever the case may be.
