ok here is the recipe for almond cake.
6 eggs
230 grams sugar
230 grams ground almonds.

Separate eggs.
Beat yokes and sugar together in mixing machine
Fold in ground almonds by hand.
Beat whites separately.
Pour the yoke mixture into the white and mix together.
Grease 8 inch round container.
Put oven on 180 degrees C (Gas mark 4) and leave cake in for about 40 minutes. Use cake tester to ensure cake is baked all over, before removing from oven.
Enjoy

Chocolate moose, these are the best cookies ever! I make them every Pesach. Hope I'll be able to find enough ground nuts this year. Thanks for the recipe.

Thanks, cbg. I already baked a double recipe of these cookies as I had no problem finding ground almonds in my local supermarket.

with thanks to ADAPT for this recipe

"1" cup sugar
"2" eggs
"3" cups ground nuts (one kind or a combination)

This recipe can be mixed in a bowl, by hand, and can be frozen. You mix your ingredients together; the mixture will be thick. Drop onto a greased or foiled cookie sheet or shallow pan by small spoonfuls.

Bake at 350 for 15 minutes or until golden. Let harden before removing from pan.

Makes about 4 dozen in 2 cookie sheets. (I made this recipe twice last year; once for chol hamoed and once for the end of yomtov, and it was really really great !!!)

Can I halve the recipe? I don't have enough ground nuts?

I made these today with liquid sugar and instead of cookies, I poured it into a baking pan. Makes nice little brownies (minus the chocolate).

Is it a problem to just use one egg? I am also looking to make a half batch of these.
