I don't fully understand how the puff pastry presents & roses were made. Can anyone elaborate please?
Presents- Is it a large right angle cut? how are they so even?
How do the petals stay together?

You can do those:
bake whole potatoes till soft, cut in half and scoop out the inside, mash with fried onions and spices. In a seperate pot make mashed sweet potatoes. Put mashed (white) potatoes into their skin and syringe on a nice design with the sweet potatoes, bake for a little so that tops become crispy.
You can also do something simpler like a good mashed potatoes, and ontop you put sweet potatoe chips (slice sweet potatoes with a peeler and deep fry before serving) it looks really nice and is delicious.
