We’ve had this discussion before about unpeeled potatoes for kugel. I tried it years ago using yukon gold potatoes at the behest of my neighbor, who insisted it made no difference. It tasted like dirt. No one wanted to eat it.

I have a problem digesting lecithins from potatoes and their skins, so it’s recommended to soak overnight in the fridge. I do it all the time and I believe it makes the potatoes more delicious. I soak them cut up and peeled after having been rinsed a few times.
