My dh proudly came home brandishing two beautiful WHOLE st Peter's fish, INCLUDING THE HEADS
what do I do with it? it's inside have (thankfully!) been cleaned out, but otherwise, it's ALL there.
do I bake it covered/uncovered, with what, and for how long?

Has it also been scaled?
I stuff the cavity with aromatic herbs - basil, mint and cilantro.
The outside, I score several cuts, rub with olive oil then sprinkle salt, black pepper and garlic powder on both sides.
Place on a sheet of aluminum foil and seal it in a 'tent', bake at 180 degrees Celsius for about 20 minutes.
