I see people recommend to make it in a pan on the stove. How exactly does that work - how high a flame, how long, how do you flip without breaking it, and how do you warm it up for seudah?

I have a double sided pan. Flipping is easy. Medium flame.
Keep warm on a blech.

It's effective a giant latke.
Put lots of oil in tbe pan so it doesn't stick.
The easiest way to flip it is if you use a double sided frying pan.

Otherwise, slide it on to a plate, and then cover it with the pan and turn it upside down.
