I recently bought a bosch mixer and I'm struggling to figure it out. I used to make small batches of challah in my kitchenaid and I had it down to a science. It came out almost the same way every time, I had the consistency down pat, etc. I switched to the bosch so that I could do the mitzvah of hafrashas challah since my kitchenaid is too small for that.
With the Bosch I'm noticing that the dough looks nicely mixed but it's a lot more sticky and less kneaded-looking when I shape the dough. And it turns out suuuuuper fluffy, almost too much. Should I be mixing for a very long time in my bosch? Any ideas on which setting, too? I am so confused.

idk probably like 2-3 minutes, until it looked nicely mixed. But maybe I'm way off lol

I knead a 5lb recipe for 5 minutes on #1 & 10 minutes on #2.

I mix for about 12 minutes.
Kneading for a short time will result in heavy dense challos.

Ironically enough my challahs have never been fluffier than they are now which is why I was nervous to increase mixing time.

Try it. 2,3 minutes sounds like way too little

I mix for a few minutes to combine. Rest for 10 minutes, and then resume mixing. Helps gluten strands form but maybe you don't like that...?
