Depends on the contract.
My relative was let go because of budget cuts, unfortunately the company had 'never gotten around' to having her sign a contract, so....her hands were tied.

If you're in Israel check kol zchut. I don't remember if it's 2 weeks or a month. I also don't know if it makes a difference if the company is closing.

The new employer is asking me for my hours, list of duties and pay.
It seems strange to me that he's asking me these questions- can't he get this info from the previous employer? What am I missing here?

Your previous employer doesn’t give out that information. It would be unethical.
Sorry - I think I misunderstood. I thought you were going to a new job, not staying at the same place with a new boss.

Instead of writing your old salary you could write “salary expectation” or something like that, but you risk them not keeping you if your number is too high

If you want to get paid you need to answer.
If you want a raise, you can respond with “ to be negotiated” and request an amount.

An employer is usually responsible to pay you, and cover the budget.
Is it not the case here?

I don't understand.
The new employer wants to know what I was getting paid until now. Is this information that I need to provide? How can I answer without underselling myself?

You're supposed to answer truthfully otherwise if you lie and he finds previous stubs or someone says something to him you'll be out the door.
Regarding the question if it's something you need to provide. Well if you want a paycheck he'll be the one providing it. If you don't respond, he won't pay?

I don't want to lie but I am asking how I can politely answer without providing an actual number. As I said, I am currently underpaid. When you apply for a new job, do you always disclose your previous salary?

This is not applying for a new job or a negotiation of salary
He is very likely deciding if you are worth keeping.
For your own sake please answer honestly

This comment makes no sense. Nobody buys a business before seeing the books. Her pay should be clearly visible. It makes sense to ask about job description, but salary?
