Apple in Honey - Shana Tova U'mesuka

Pomegranate - Sheyirbu Zechuyoseinu K'rimon

Carrots - Shetigzor Aleinu Gezeiros Tovos

Black Eyed Peas (or fenugreek or carrots) - Sheyirbu Zechuyoseinu

Leek (or cabbage) - Sheyikarsu Soneinu

Gourd/zucchini/squash - Shetikra Ro'ah Gezar Dineinu V'yikarooh L'fanecha Zechuyoseinu

Spinach (or beets) - Sheyistalku Oiveinu U'mastireinu

Head of a sheep or fish or jelly fish - Shenihiyeh L'rosh V'lo Lizanov

Fish - salmon or gefilte from meal - Shenifreh V'nirbeh K'dagim

We do beets, I flavour ready cooked ones with salt, pepper and lemon juice, my in-laws buy beet leaves and make some sort of patties/cutlets
For leek, I make a leek pie
Carrots as tzimmes
Gourd/marrow in the soup if doing soup
Everything else as is

Depends on whom you ask--there are anywhere from three to nine plus the apple in honey and you can add your own. We used to have fun inventing some. Most of them are based on a perceived similarity between the sound of an Aramaic or Yiddish word, sometimes a Hebrew word, and some concept. It's charming and clever, but I see nothing inherently holy about any of it.

. Doable. Beets are selek in Hebrew (boy did I laugh when I heard about an actor named Tom Selleck) and the association is "sheyistalku oy'veinu"--that our enemies should scram.
