This is DELICIOUS...my DD's will confirm.

Slice & fry LOTS of onions. Drain as much oil as poss, but don't worry if you have some, it's inevitable. Mix the onions with a jar of apricot jam. More meat, more jam! Shmear it on the roast.

Meanwhile, in your pan, pour in some heavy, cheap & nasty red wine,. Before you shmear pour some over the meat. This is absolutely fabulous. At Pesach I peel plums, make a compote, & use that instead of the apricot jam.

Half way through roasting (you may need to baste) turn the meat & dump as much of the shmear back on the meat. Let me know how it turns out!!

BTW, don't waste your $$ on dekel (my father was a butcher) it can be tough. Spend a few $$ extra & get a best cut like French Roast or Silver Tip. No waste & it just melts in the mouth! My grandson Yehuda (he's 8!!) is excited I'm making this for RH. And Succos!! Very Happy

whats really good is if you spice it on both sides, salt, pepper, garlic then broil it just till sizzling in the broiler. then when done pour some sweet and sour duck sauce on top and bake till cooked through and through. So simple and so quick
