I'm so bored of my same old cooking and would really like to try some exciting authentic ethnic recipes (any ethnicity).
Would prefer to use minimal sugar, only whole grain carbs and easy on the heat. It's just the two of us adults eating and our main proteins are ground beef, fish (mostly salmon), and chicken.

ETA: Is "ethnic" ok to say? I feel like it might not be but idk how else to call it. Non American/Ashkenazi food?

I'm not going to be any help with recipes - I don't really use any. But one idea is to simply change the spices on the same foods you already make. There are such nice spice blends available reflective of many ethnic flavor profiles. Experiment with different spice blends on simple things like roasted chicken or roasted veggies. Same technique, same food, but feels like a whole new dish with new, exotic spice profiles.
