Does anyone have a recipe for that? Need something else to put into the cholent beside potatoes and meat (and not everyone likes potatoe kugel by me...)

I’ve never heard of matzah balls in chulent. Wouldn’t they fall apart?

Do you mean kishka balls? Because kneidels don't belong in a cholant.

I put knaidlach in cholent on Pesach. It’s a special Pesach treat. I mix matza meal, spices a bit of oil and some hot water until it holds its shape.
My mother a”h used to put one big one in, I do a bunch of small ones. Some do fall apart but it just thickens the cholent.

I put matza balls in the pesach cholent. I cook them first in boiling water, though I guess you don't have to. They definitely do not fall apart. They get kind of firm and very yummy.
I also thicken the cholent with matza farfel or crushed matza. That does fall apart, but it makes the cholent less soupy.
