I didn't know about this, but I cut a bunch, chopped, blended with a bit of olive oil and froze raw. Is it better to fry them first? Does it make a difference at this point other than having them ready to use as fried?

For me it's easier to fry in one batch, wash pan and put away.
Then use onions as needed in oven recipes that use disposable tins.
Do what's easier for you.

If you do tons in advance how much is one onion when you need to measure it out?

If I sauté 12 onions, I divide them into 12 plastic cups and freeze. No measuring necessary.
