So in the last few weeks I've made:
Fudgy chocolate cake
Mocha/coffee cake
Cherry crumble
Lemon tart
Lime tart
Carrot cake
Besides boring old vanilla/marble, what other types of cake are there? Easy recipes with yummy frosting (I don't hold of cakes that don't have frosting. If it doesn't have a filling, it's not a sandwich. If it doesn't have frosting, it's not a cake. )

"French Coffee Cake" - basically a marble cake (preferably with cinnamon mixed into the white batter), dressed up with a streusel topping and drizzled melted chocolate. Easy, presentable, and yummy.

Oreo Brownie Vanilla Crumb Cake
It's got real chocolate melted in there! It's got Oreos! It's got crumbs! It's got a delicious layer of vanilla cake. Does it get any better than this??
It's so good and as usual so easy to make!
•
For the cake:
2 eggs
1 cup oil
1 cup sugar (2 cups if you like your cake sweet)
1 cup milk (I used almond to keep it parve)
1 tsp almond extract
1 Tbsp baking powder
3 cups flour
10-15 Oreos broken into pieces (see instructions below when to put them in)
➡️In a bowl using a whisk or wooden spoon mix the first 6 ingredients. Add the flour and baking powder mix until incorporated set aside.
•
For the brownie layer
3/4 cup chocolate chips
2 tsp oil
➡️Melt the chocolate and oil together. I like to do this by putting it in a pan in the oven covered on 350 for 10 min
•
To assemble
➡️take 1 3/4 cup batter, mix with the melted chocolate set aside.
➡️In a well oiled Bundt pan. Pour the remaining cake batter into the pan. Place the 10 broken Oreos directly in the batter.
➡️Pour the brownie batter on top. Swirling the brownie batter to create a marble effect.
➡️bake 350 for 50-60 minutes until a toothpick inserted comes out clean.
•
For the icing:
1 1/2 cup icing sugar
1 tsp vanilla
3 tsp hot water
1 tsp oil
5 Oreo crushed
❗️I generally hate making icings. The consistency is never right. So be vigilant. If it's too liquid add more sugar.
➡️mix the first four ingredients together using a whisk. When the cake is completely cooled flip it onto a cake plate.
Drizzle the icing over the cake. Top with the crushed Oreos
Enjoy! 😊

French Coffee Cake:
2 1/4 Cup flour
2 tsp baking powder
1 1/2 Cup sugar
1 to 2 tsp cinnamon
1 tsp salt
1 to 2 tsp vanilla
Mix together with:
2 eggs
3/4 Cup liquid (soy/almond milk or juice)
1/2 Cup oil
Add 3/4 cup boiling water and beat it in (like Hershey's recipe)
Pour most of batter into sprayed pan (1 9x13, 2 9" round, 12-18 cupcakes)
To the remaining batter, add
1/4 Cup cocoa
1/4 Cup sugar
Mix. Add some liquid if it's much thicker than the rest of the batter
Then pour it over the white batter and marbleize with a fork or spatula.
Bake at 375 for 20 minutes.
Meanwhile make streusel:
Mix flour. sugar, and some oil to form coarse crumbs.
Remove cake from oven and sprinkle crumbs all over.
(You really can sprinkle the streusel over the raw batter but I find the crumbs sometimes sink so it's not as pretty.)
Return to oven and bake an additional 10 (for cupcakes) to 40 minutes until it looks fully baked and a toothpick inserted in the middle comes out clean.
Cool completely.
Pour 1/4 Cup chocolate chips into a ziplock bag. Dip in hot water until melted. Sip a corner off the bag and drizzle over the cake.

Did anyone make this?
My batter came out very thick. Not pourable and cake was dry. Could be I left out one of liquids. Before I try again, would love to hear if it worked for anyone.
