Grocery had Delmonico chuck steak on sale so I bought a package for supper. Any tried and true recipes or techniques? I struggle with getting the right texture in meats- how can I make sure it doesn't come out chewy?

Chuck is thick and fatty so stays pretty juicy I put it in Pyrex with some sliced fresh mushrooms and Yukon potatoes and a little water and onion soup mix with no msg and cook it covered till the fork is soft depending on size of meat and how fast your oven cooks

I brown it over onions, cover with cubed potatoes, equal parts tomato sauce and wine (I use a sweet red wine or even grape juice, but the original recipe called for dry wine). Simmer or bake for a few hours till the potatoes are very very soft.
