I completely understand that you are tired and overwhelmed and writing individual cards is really hard. That being said, my personal perspective is that sending a poem is not the way to go. The whole point of a thank you is to acknowledge the gift or meal or favor friends and family did to honor the birth. A poem for all doesn't accomplish that. For my first child, I had to write over 100 thank yous. We had a spreadsheet with the giver, the item, and the address. I basically had a format of Dear Ploni Almoni, Thank you for the (beautiful, generous, useful, meaningful)________(Fill in the item). We really appreciated your coming to the (bris, kiddush, hospital) and joining in our simcha or in the alternative (your bringing us a meal.) It meant so much to us that you thought of us. Love, New Mommy and Daddy. My husband wrote to his family and I to mine. In the alternative, one of my friends took a photo of the baby with each of the gifts and a thank you sign and sent that to the gift givers. I like that as an option. It's not as difficult as the writing and can be done while the baby is awake. Mazal tov on your new bundle of joy and good luck.

For majority of people (not the random relatives I don't actually speak to or my mother's coworkers) I take a picture of baby using/wearing the gift and text/email it with a note "dear x, thanks so much for x, baby loves it! May we continue sharing simchas. "

Stop with the tacky "poems" already! Hardly anyone appreciates them, and IMHO sending a poem composed by someone else is rather cheating. It's just like sending a Hallmark card and writing "Dear Shaindy" at the top and "Love, Rivka" at the bottom. The difference is that in the latter case, it's obvious that you put in zero effort, whereas in the first case you're giving the false impression that you labored over this rhyme. It's not illegal but is not entirely ehrlich either.
Just use your own words as if you were talking to the person. What would you say to them? How much you like the gift, how kind and generous it was of them to give it, something you like about it--the color, the style, the convenience, the cuteness, the fact that it's the latest must-have, whatever--or the fact that you or your baby are using it all the time. Short, sweet, sincere (or, if you actually hate it, insincere but convincing), finished.
