My husband and kids have been asking me to make quinoa. Any good recipes out there? I guess as a salad.

You can add it to any salad!
Lettuce, mixed vegs and dressing if your choice
It’s great with Israeli salad
Great with diced grilled vegs

I bake quinoa in oven covered. At same time I bake sliced grape tomatoes, frozen broccoli onions and zucchini. You can skip any or add different ones. I mix together with Roasted chopped almonds(I chop.almonds and roast for a short time, the burn easily) and feta cheese and salad mate greek dressing.
Heaven on earth!!

Yum. What’s your technique for baking the quinoa in the oven? Thanks
And what do you season the roasted veggies with? Temp how long?
Does this work as a good lunch to take to work?

I make my quinoa in my rice cooker. It comes out perfect.

Here's my favorite Quinoa Pesto Salad recipe:

1 large sweet potato, cubed
2 zucchini, cubed
Lay sweet potato and zucchini on separate baking sheets. Drizzle well with oil, salt, pepper, and garlic powder. Roast at 450 – zucchini for 15 minutes and sweet potato for 30 minutes – both should be soft.

16 oz baby spinach (I've used regular Romaine instead, or Kale)

¾ cup quinoa, cooked according to package directions

½ red onion, finely diced
¼ lb. green beans, lightly steamed (can be done in oven) and chopped
½ cup grape tomatoes
3 Tbsp. sunflower seeds

Dressing:

1 tbsp mustard
1 tsp honey
½ cup olive oil
½ cup fresh basil, chopped (3-4 cubes frozen)
1 clove garlic
1 tsp salt

Dinner done has a great easy recipe. Just mixed cooked quinoa with lots of sauteed onions, add salt and pepper.

I add a drop of oil to quinoa. Any oil but avacodo oil is fine. Follow directions on package. Usually I make tons, a whole package to share with friends and family. I shake over sifter but never found bugs. Pour into 9x13 pan. Add water and a drop of oil and cover. Bake on 400-450. Check in a while. Maybe 45 minutes? If its watery leave I'm a bit longer. If you want the vegetables more Roasted you can broil a bit and then mix and broil until you like the vegetables a certain way. Its in dinner done I think. But don't bother with making salad dressing. I put a bit of oil on vegetables. That's it. You can add salt and pepper if you want page 252 dinner done

I do the same recipe but with roasted beets instead of zucchini and I usually skip steaming the string beans and it's our favorite!

Saute any vegetables 1 portion (I like squash, onion and pepper)
Add salt to taste
Add in an egg to the veggies while sauteing, and mix well.
Add 1/3 cup quinoa
Add just enough water to be absorbed by the quinoa. Mix from time to time while cooking
Cook until quinoa is soft and enjoy.

I made quinoa/black lentil majadera the other week.
Basically same idea as regular majadera.
Cooked the quinoa, lentils and fried onions separately and then combined them all and used salt, pepper, garlic and cumin as seasoning.
Was really good.

You can also put it into a pan together with chicken, water, and basic spices (salt, pepper, etc.)

The quinoa gets the flavor from the chicken. It's one of my kids' favorite ways of eating quinoa.

What's the ratio of quinoa to water? I do this with rice or barley all the time and would love to try with quinoa

I found that the package comes with the best ratios.

Guys. Best tip ever.
Cook the quinoa itself the exact same way you cook pasta. As soon as it's the texture you prefer (some like mushy, others prefer it have a sanp to it...)just drain the water.
Takes minutes and comes out perfect every time

So you boil water and then put the uncooked quinoa in for like 7-8 minutes? Cool I’ll have to try.

Sautee onions in a large frying pan. Add garlic powder. Add fresh sliced mushrooms to the onions and fry until the texture of the mushrooms changes.

Rinse the quinoa.

Remove onions and mushrooms from the pan. Add quinoa and either water or soup broth to the pan. Cook until there's hardly any liquid in the pan. Add onions and mushrooms and allow the mixture to cook together for a few minutes.
