Makes 3 dozen of the yummiest cookies around. No margarine and very little oil!!

1 cup flour
1 1/3 cup rolled oats, uncooked
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup unsweetened applesauce
2 Tablespoons oil
1/2 cup splenda (I used sugar cause splenda costs too much in Israel)
1/2 cup Demarara sugar (I used brown)
1 egg
1 tsp. vanilla

Put flour, baking powder, baking soda and salt in a bowl and mix together. Combine other ingredients and stir in. Add flour mixture and stir (I didn't use a mixer for this. Just my bare hands!)

Wet hands and form small balls. Place 2 inches apart ona lined cookie sheet. Press down slightly with a wet fork.

Bake for 9-10 minutes or until bottoms are brown.

Taken from Mishpacha (Tamar Ansch, I think)

Made them yesterday. Easy, breezy! just added a handful of dark chocolate chips. Looks and smells unbelievable. Didn't taste it yet, though (I am being good and not eating sweets before bed:) Will check it out at tonight's meal.

It's light brown and it's supposed to be healthier than brown sugar because sometimes there are additives in brown sugar.

That's just in Israel. In America, they're all the same.

Thank you Chossid mom, I just made these cookies and they are amazing!!!

I used oil instead of applesauce, and added chocolate chips.

Thank you! I tried supposedly low-fat cookies before, but they all needed more flour and much more oil than this recipe.

Do you think I can make these with spelt or whole wheat flour instead of white?

Maybe I'll make it tomorrow.

I noticed some of you used oil instead of applesauce. Is applesauce a substitute to oil?

If you want to cut down on oil you can often cut out about 1/3 of the oil and use applesauce. It's alot healthier and you don't taste or see the difference, I think. Try it.

BTW I hate chocolate chips in my oatmeal cookies!!! Oatmeal goes with cinnamon and apples only in my book!
