ISO carrot kugel/muffins - no nuts, no gebroks, no processor

I see recipes that meet each of these criteria but not all 3!
Anyone have?

Yes I’m pretty sure I have one. If you still need it for second days, remind me after yom tov.
We use it for chol hamoed snacks!

10 large carrots, boiled until soft
5 eggs
1 tbsp potato starch
1 c sugar
1 tbsp vanilla
1/4 tsp cinnamon
1/8 tsp salt
1/4 c oil
1 c crushed lady fingers or other pesach crumbs

Mash carrots well. Mix everything in except for crumbs, until smooth.
Spray 12 muffin tins. Divide crumbs in half. Put half crumbs into bottom of muffin tins. Pour carrot mix over the crumbs. Top with the rest of crumbs.
Bake 40 min until firm.

Adding some notes:
- original recipe calls for food processor but it works fine if you mash with a fork and mix, or use your hands!
- I find it comes out a little mushy and works best to bake in paper liners so they don’t fall apart when serving

The closest thing I have is panko crumbs I used for shnitzel... wonder if that would do... lady fingers all had nut warnings where I shopped.

You can skip the crumbs
You can top with cinnamon and sugar if you like
This recipe can probably also be done with sweet potatoes or butternut squash
I have a very similar recipe
It’s more like a kugel than a muffin I think
But if you separate and beat up the whites it becomes super light and fluffy
For those of you who can have nuts you can add some on top or even in the mixture

OK I definitely don't have the patience or skill set for separating eggs... will keep trying...

Are you ok with hand grating the carrots? Or you want a boil then mash type of recipe?

It definitely is more of a kugel than a muffin, but you do not have to separate eggs. It comes out good! The crumbs make it have more of a muffin feel, but not necessary.
Do you have any nut-free potato starch based cookies or crackers? Those would work too. Probably your pesach crumbs are fine too!

can I substitute some of the sugar for vanilla sugar and leave out the vanilla?
