Ok, I lost my matzo ball recipe. I'd like to make it tonight and found a few recipes in my cookbooks, but they sound weird. So...I want one that you love! TIA - I want to make them tonight!

eggs, lightly beaten
oil
water (or seltzer)
salt
pepper
matzahmeal
Sorry I don't have measurements, but depending on how many I'm making, I usually use 2, 3 or 4 eggs. The rest is done by eyeballing and working as I go. Sorry.

4 eggs
1/2 cup seltzer
4T oil/shmaltz
1 C. matzoh meal
salt (maybe 1 t?)
pepper
boil in salted water 20 min.
enjoy!
this one is almost like my reg recipe - reg recipe has 1/3 cup margerine though, not oil. I suppose you couild use the pesach stuff...if it doesn't gross you out!
